Difference between sharpening and sharpening

Before we go into sharpening samples, we would like to clear up a misunderstanding. There is a difference between turning on and sharpening knives. When you turn on a knife, you remove almost no metal, something that does happen when sharpening. In principle, switching on only ensures that the microscopic metal particles are neatly aligned again. For example, with a sharpening rod you can remove a burr from the blade, so that you can use your knife as usual.

How do you use a sharpening steel?

Many people do not know exactly how to use a sharpening steel. Often the knife is passed randomly. Although this may make the knife a little sharper, this is not the way you use sharpening steels. To prevent you from using the wrong approach, we explain how to use sharpening steels in 6 steps.

  • Step 1: Hold the starter bar with your bad hand and make sure the point is pointing downwards. You can rest the bottom on a cutting board if you want.
  • Step 2: Place the heel (the tip near the handle) against the bar.
  • Step 3: Determine the correct angle before starting to cast on.
  • Step 4: Slowly push the knife away from you along the sharpening steel (safe variant). Try to keep the same angle all the time.
  • Step 5: Run both sides of the blade along the sharpening steel about 10 times. Apply a lot of pressure on the first five strokes and gradually decrease the pressure on the next five strokes.
  • Step 6: Rinse the blade under the tap and dry it to remove any metal residue.

Different types of attachment bars
